Prawn Laksa Recipe to Try at Home

It typically consists of rice noodles, cooked in a spicy broth made from coconut milk, tamarind, lemongrass, galangal, chili, and other aromatic herbs and spices.

 

The soup is often served with shredded chicken, shrimp, or other seafood, as well as bean sprouts, boiled egg, and fried tofu. There are many different variations of laksa soup, depending on the region and local ingredients, but it is generally considered a delicious and satisfying dish that is perfect for warming up on a chilly day.

Here's a recipe for prawn laksa that serves 4 people:

 

Ingredients:

  • 400g of prawns, peeled and deveined
  • 400ml of coconut milk
  • 1L of chicken stock
  • 1 stalk of lemongrass, bruised
  • 4 kaffir lime leaves
  • 2 tbsp of oil
  • 1 tbsp of tamarind paste
  • 2 tbsp of sugar
  • 2 tbsp of fish sauce
  • 400g of rice noodles
  • 200g of bean sprouts
  • 4 boiled eggs
  • Coriander leaves and sliced red chili for garnishing

 

Spice paste:

  • 5 shallots, peeled
  • 3 cloves of garlic, peeled
  • 2 stalks of lemongrass, chopped
  • 5 dried red chili, soaked in warm water
  • 2 fresh red chili
  • 2 tsp of belacan (shrimp paste)
  • 1 tsp of turmeric powder

Instructions:

  1. To make the spice paste, blend all the ingredients together until smooth.
  2. In a large pot, heat up the oil over medium heat. Add the spice paste and fry for 3-4 minutes until fragrant.
  3. Add the chicken stock, lemongrass, kaffir lime leaves, tamarind paste, sugar, and fish sauce. Bring to a boil and then reduce the heat to simmer for 10 minutes.
  4. Add the prawns and coconut milk to the pot and cook for a further 5 minutes until the prawns are cooked through.
  5. In another pot, cook the rice noodles according to the package instructions. Drain and set aside.
  6. To serve, divide the rice noodles into 4 serving bowls. Ladle the laksa soup over the noodles and top with bean sprouts, boiled eggs, coriander leaves, and sliced red chili.
