Here Is How To Make Classic Ceviche

It is a type of seafood dish made with raw fish or shellfish that is marinated and "cooked" in citrus juices, typically lemon and lime juice. The acid in the citrus juice effectively denatures the proteins in the seafood, giving it a firm texture and opaque appearance, similar to the effect of heat cooking.

Here's a classic ceviche recipe:


Ingredients:

  • 1 pound (450 grams) of fresh white fish fillets (such as tilapia, cod, or halibut), cut into small cubes
  • 1 cup of freshly squeezed lime juice
  • 1/2 cup of freshly squeezed lemon juice
  • 1 small red onion, thinly sliced
  • 1-2 jalapeño peppers, seeds removed and finely chopped
  • 1/2 cup of chopped fresh cilantro
  • 2 tomatoes, diced
  • 1 avocado, diced
  • Salt and pepper to taste

Instructions:

  1. In a non-reactive bowl (glass or stainless steel), combine the fish cubes, lime juice, and lemon juice. Make sure the fish is fully submerged in the citrus juice. Cover the bowl and refrigerate for about 30 minutes to 1 hour, or until the fish is opaque and "cooked" by the acidic juices. Stir occasionally to ensure all the fish is evenly marinated.
  2. While the fish is marinating, prepare the other ingredients. Slice the red onion, chop the jalapeño peppers, cilantro, tomatoes, and dice the avocado. Set them aside.
  3. Once the fish is "cooked" in the citrus juice, drain the excess liquid. Add the sliced red onion, chopped jalapeño peppers, cilantro, and diced tomatoes to the fish. Gently toss to combine.
  4. Season the ceviche with salt and pepper to taste. Be mindful not to oversalt, as the fish has already absorbed some salt from the citrus juices.
  5. Lastly, gently fold in the diced avocado to avoid mashing it. The creaminess of the avocado adds a nice texture to the ceviche.
  6. Allow the ceviche to sit in the refrigerator for another 10-15 minutes to let the flavors meld together.
  7. Serve the ceviche chilled. You can garnish it with additional cilantro leaves and serve it with tortilla chips or toasted corn kernels on the side.
