But what if we combine the flavor of grilled fish with the spicy and sour flavor? The result is a perfect blend that makes you want more!


With its delicious spiciness and refreshing acidity, this seasoning is usually used as a dipping sauce or dressing on tropical fresh fruits salad or vegetables salad in Southeast Asian Cuisines. However, who would have thought that it can also be a wonderful complement to grilled fish? The combination of the savory taste of the fish with the uniqueness of this seasoning will bring a new and unforgettable culinary experience.

Here is a recipe for grilled fish with delicious spicy and sour seasoning:

 

Ingredients:

  • 1 fish (size according to taste, such as tilapia, carp, or snapper)
  • 2 tablespoons of lime juice
  • Salt to taste
  • 1 bay leaf
  • cooking oil to fry the fish

 

Seasoning:

  • 5 chili peppers (adjust to the desired level of spiciness)
  • 3 large red chili peppers
  • 3 cloves of garlic
  • 5 cloves shallots
  • 1 candlenut
  • 2 cm ginger
  • 3 tomatoes
  • 1 tablespoon brown sugar, finely combed (or granulated sugar)
  • 1 tablespoon tamarind juice
  • Salt to taste
  • 1 teaspoon shrimp paste
  • 2 tablespoon sweet soy sauce

How to make:

  1. Clean the fish with clean water and rub with lime juice and salt. Let it sit for about 15 minutes to let the spices soak into the fish.
  2. Meanwhile, prepare the seasoning. Puree the chili pepper, large red chili, garlic, shallot, ginger, shrimp paste and tomatoes using a blender or mortar. Add sugar, tamarind juice, sweet soy sauce and salt to taste. Mix well until all ingredients are combined.
  3. Fry the fish in a wok until cooked on both sides. Remove and drain. 
  4. Saute the spices and bay leaves until fragrant and cooked, you can also add flavoring to taste. Turn off the heat and put the fried fish into it, stirring until the fish is covered with spices.
  5. Heat the grill and brush the surface with a little oil to prevent the fish from sticking. Grill the marinated fish on the grill over medium heat until cooked and browned. Turn the fish over and over so that it cooks evenly and does not burn.
  6. Once the fish is cooked, remove from the grill, add sliced cucumber, tomato and lettuce leaves as garnish.
