Ingredients:

  • 2 cooked lobsters (about 1 1/2 pounds each), meat removed and chopped into bite-sized pieces
  • 2 tablespoons butter
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh tarragon, chopped (or 1 tablespoon dried tarragon)
  • Salt and pepper, to taste
  • 1/2 cup grated Gruyere cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions:

  1. Preheat your oven's broiler to high.
  2. In a large skillet or sauté pan, melt the butter over medium heat. Add the shallot and garlic, and cook until they soften and become fragrant.
  3. Pour in the white wine and let it simmer for a minute or two until it reduces slightly.
  4. Lower the heat to medium-low, and then stir in the heavy cream and Dijon mustard. Let the mixture simmer gently until it thickens, stirring occasionally.
  5. Add the chopped lobster meat and tarragon to the cream sauce, stirring well to coat the lobster with the sauce. Season with salt and pepper to taste. Cook for another 2-3 minutes until the lobster is heated through.
  6. Divide the lobster mixture among four individual oven-proof serving dishes or one large baking dish.
  7. In a small bowl, mix together the grated Gruyere and Parmesan cheeses. Sprinkle the cheese mixture evenly over the lobster in each dish.
  8. Place the dishes under the preheated broiler and cook until the cheese is melted, bubbly, and lightly browned, about 3-5 minutes. Keep a close eye on it to avoid burning.
  9. Remove from the oven and garnish with chopped fresh parsley.
  10. Serve the Lobster Thermidor immediately with crusty bread or steamed vegetables on the side.
