Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons black peppercorns, coarsely ground
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon sugar
  • 1 tablespoon butter

Instructions:

  1. In a bowl, mix the soy sauce, oyster sauce, and sugar together until well combined. Add the shrimp to the bowl and let them marinate for about 15-20 minutes.
  2. In a wok or a large skillet, heat the vegetable oil over medium-high heat.
  3. Add the minced garlic and grated ginger to the hot oil and sauté for about 1 minute until fragrant.
  4. Add the marinated shrimp to the wok, reserving the marinade. Stir-fry the shrimp for about 2-3 minutes until they start turning pink and opaque.
  5. Push the shrimp to one side of the wok and add the coarsely ground black pepper to the other side. Toast the pepper for about 1 minute until fragrant, being careful not to burn it.
  6. Mix the shrimp with the toasted black pepper and then add the reserved marinade to the wok. Stir-fry everything together for an additional 1-2 minutes until the shrimp are fully cooked and coated with the sauce.
  7. Add the butter to the wok and stir until it's melted and incorporated into the sauce.
  8. Taste and adjust the seasoning if needed.
  9. Remove the wok from the heat and transfer the black pepper shrimp to a serving platter.
